Recipes from a kitchen witch: Apple crisp

For the fruit:
4-6 apples (see note 1)
1/4 cup sugar
Topping:
1 cup flour
3.4 cup sugar
1 tsp baking powder
3/4 tsp. salt
1 egg
1/2 cup butter
1/2 tsp. cinnamon
Prep:
Preheat oven to 350F. Grease a 9x13" glass baking dish.
Prep the fruit:
Slice your apples and place in your pan. Sprinkle the apples with 1/4 cup sugar and toss to coat.
Make the topping:
In a medium mixing bowl, add the flour, 3/4 cup sugar, baking powder, salt, and crack your egg into the bowl (see note 2). Mix well and sprinkle over fruit mixture. Melt the butter (see note 3) and drizzle it over the crumb mixture. Sprinkle with cinnamon (see note 4). Bake at 350 for 40-50 minutes or until golden brown and delicious.
Notes and tips:
- My favorite apples to use for apple crisp are Granny Smith, although you could use any apple that is good for baking. Granny Smith are a little more tart and I think stand up to the sugar in this dish.
- Crack eggs on a flat surface, like your countertop. Doing so will make it less likely to get eggshell in your bowl.
- I like to melt a stick of butter in the microwave on High for 30 seconds. If the butter is not yet melted, microwave it in 30-second intervals until it is melted thoroughly.
- My favorite cinnamon is Penzey's Cinnamon. They have many varieties, although their regular Cinnamon is what I typically use. It is a blend of other varieties of cinnamon. You can also use Apple Pie Spice or other seasonal fall blends.
